Dumplings with cabbage and mushrooms

PIEROGI Z KAPUSTA I GRZYBAMI

Dough :

  • 50 dag of flour
  • hot water
  • salt

Filling :

  • 50 dag of sauerkraut
  • 20 dag of mushrooms
  • 2 onions
  • 2- 3 spoons of bread crumbs
  • 30 dag of smoked bacon
  • Salt, pepper , sugar
  • Oil for frying

RECIPE

Filling :

Wash mushrooms and one onion, and cut them into slices. Fry mushrooms on a hot oil. Fry an onion on the second pan for a moment, and then mix everything together.
Cut the sauerkraut cabbage, fry it on heated oil. Put a little sugar and pepper, for the taste. Mix all ingredients, season them, add bread crumbs and stir. Wait for a moment as it gets colder.

DOUGH :

Sieve the flour, make a hole in the flour, pour hot water, chop it with a knife. Make a dough. Roll out thin slices of dough, form circles with a glass. Fill the dough with filling and stick two edges of the circle together as you close the circle around the filling. Boil in salty water. Put it out on a colander. Make portions. Serve with fried bacon and onion.

Dried-fruit soup

  • 2 liters of water
  • 2 cups dried fruit (pears, cherries, apple, plums)
  • 1 cups of sour cream
  • 2 spoons of flour
  • sugar
  • salt

Cook fruit in water with a pinch of salt and 3-4 spoons of sugar.
Next add sour cream combined with flour. Serve with pasta.
It used to be served with potatoes and pork fat or potatoes and egg.

HOME MADE NODDLES

PRODUCTS :

  • WHEAT FLOUR 150 gram
  • EGG 1
  • WATER 1 table spoon
  • SALT

MIX FLOUR WITH AN EGG, WATER AND SALT. STIR UNTIL IT’S SMOOTH, ROLL OUT UNTILL IT’S 1 MM THICK. DRY IT AND CUT IT UP INTO NODDLES. BOIL NODDLES, RINSE WITH COLD WATER AFTER BOILING.

Racuchy/Fritters

  • 2 1/2 glasses of flour
  • 15 dkg of butter
  • 3 eggs
  • 3/4 glasses of sugar
  • 1 glass of milk
  • 5-8 dkg of fresh yeast
  • vanilla sugar
  • oil for frying

Heat the milk, combine 1 Tsp of sugar with yeast and 2 Tsp of flour in a big bowl. Cover the bowl with kitchen towel and leave it for about 20 minutes until it will start to bubble.
In a separate bowl mix sugar with the rest of the flour, yolks and the bubbling yeast. Add melted butter and whipped egg whites and mix it well and leave it to grow. Heat the oil on a pan , form small , flat cakes and fry. Sprinkle them with sugar powder or serve them with jam.
